Adapted from a Flat Belly Diet recipe. We'd all like flat bellies, but what I really love about this recipe is the great flavors you get from roasting and the balsamic vinegar. Plus, it's a very dialysis-friendly side dish, and a cinch to prepare. I omitted the salt from the original recipe, so the nutritional information is with no salt added.
